At the heart of The Ecology Center lies a bustling community, where a weekly tradition of communal dinners thrives thanks to the generous donation of time and expertise by local chefs committed to sustainable farming practices. Recently, Chef Juan Peralta Ramos, hailing from Argentina and trained under the esteemed Francis Mallman, joined forces with The Wild Kitchen and The Centre for a collaborative culinary endeavour. This feast was a celebration of farm-fresh produce, with vegetables harvested directly from the surrounding fields taking centre stage. The highlight of the evening was undoubtedly Chef Juan's signature dish: a tantalizing Plum Ceviche that perfectly encapsulated his culinary prowess and the vibrant flavours of the season.
